MONT D'OR CHEESE WITH PICKLES

1jar of HUGO French pickles vinegar
1Mont d’Or (about 500g)
1small clove of garlic
5cl of dry white wine
1to 2 teaspoons of pickle juice
Potatoes, as desired
Cold cuts of your choice: cured ham, sausage, Bündnerfleisch…
Whole-grain bread
Salt and freshly ground pepper

Preheat the oven to 200°C.

Prepare the Mont d’Or by removing any plastic wrapping but leaving the cheese in its wooden box. Make a few small slits in the rind with a knife.

Flavor the cheese by slipping thin slices of garlic into the slits. Pour white wine over the top, then add 1 to 2 teaspoons of pickle juice. Season generously with pepper.

Bake for about 20 to 25 minutes until the cheese is completely melted and nice and runny in the center.

Meanwhile, boil or steam the potatoes. Cut the pickles into rounds or small pieces.

Serve immediately: dip the potatoes into the melted Mont d’Or and serve them with cold cuts and generous handfuls of pickles.
